Recipe Roundup 2011 – Last Recipe – Black Bean Dip

Today’s recipe is the last one for this year’s booklet. Sorry for the delay, but I’ve been trying to get a teensy bit of sleep on occasion.

This recipe comes from my friend Becky’s Mom, JoAnne. I spent many overnights at Becky’s house growing up and her Mom always had great treats and meals. JoAnne made this recipe at a get together my Mom was at, and then my Mom made it for our family. It reminds me of the Black Bean Hummus at the Willy Street Coop in Madison and it is very good!

Here are today’s recipes. It’s fitting they are treats as my friend and Zumba fanatic Suzie is always generously providing treats for us! She’s been coming to my classes since the very start! I’m not sure how she found out about it originally, but I’m glad she did:-)!!!

Recipe Roundup 2011 – Day 15? – I’ve lost count!

It’s late…again! I’ve decided that sleep may actually be important ;-). So, on that note, I’m keeping this brief and promise to continue that trend this week. We’re nearing the end of the recipes submitted this year and then I’ll pull together the complete file and the index for these and post that as well. I’ll plan to be a more frequent blogger in the year ahead and post the links to recipes we try and projects we attempt around here.

A Between Turkey Meals Dinner

At our house, every other year we end up doing a double-dose of Thanksgiving: once with my family, once with Jim’s. (On the off years, my family goes ahead and celebrates without us and we don’t gain 1o pounds in the weekend by having a “second” turkey feast) This year is a double-turkey year. So for tonight when it’s just the four of us at home, we’re having non-turkey:  pork chops. And we’re trying this recipe for Slow Cooker San Francisco chops.  I’ll report back again on that one later 🙂

I’ll also be whipping up Loaded Mashed Potatoes (Check the 2006 exchange, page 10) to take along with us tomorrow. And even though I’m sure there will be plenty of desserts, I’m taking a Crustless Pumpkin Cheesecake so that I have a gluten-free option for dessert. (You know, because dessert is truly a critical portion of the meal 😉

Recipe Roundup 2011 – Day 9 – A Provençal Day

Indeed, it’s not after 11pm and I’m posting now. I decided maybe I should actually try that thing called sleep on occasion so here goes with the recipe post during daylight hours.

Today’s recipes come from friends who were former neighbors of each other and…well, Heather still lives just a block or so away, but Amy lived in between us until this summer. They both submitted recipes of a Provençal nature so I grouped them together, a main dish and a snack/appetizer. Thanks to you both!

Recipe Roundup 2011 – Day 7, part 1 – Get Bakin’

A kind Zumba fan sent me some gluten-free resources today. Her child has food allergies and it reminded me of the days when my baking was focused on a cookbook called “Bakin’ Without Eggs,” because we had a kiddo with egg and nut allergies as well. Should you need to be egg-free in your baking, it’s worth looking into that cookbook.

These recipes from Vicki and Marilyn, on the other hand, aren’t really allergen free, but they look like they are probably delicious!

Vicki is my cousin’s wife and, more importantly in my daughter’s world, she’s “Kirsten’s Mom!” Kirsten happens to be the pitcher on the state championship softball team my Dad coached last spring. Vicki does have two other great kids too! She is also known for providing yummy treats for the team (and their coaches and coaches’ grandchildren) after games.

Marilyn lived across the hall from me in college my freshman year. I think that means she knew me when I still hardly ate things that were green if they didn’t say “jello” or “kool-aid” on the package. She is now a Mom of some adorable little girls herself. Enjoy her apple bread recipe!

Festive Foods

Every family seems to have their own idea of traditional Thanksgiving foods once you get past the proverbial turkey. Or maybe it’s just that the interpretations of the standard sides are bit different. Growing up, we always had homemade rolls with Thanksgiving it seems. And I probably remember that most as I would NOT eat much of the other stuff. Anything that was made in a casserole dish was not apt to find its way into my mouth as a kid. I’m a little more forgiving now, and given the gluten-free trial I won’t be partaking of the dinner rolls this time around.

However, if you are making your own rolls, I did make some from scratch last year and it was a sneaky way to get in some veggies in my daughter’s diet 😉 These Butternut Squash Dinner Rolls from Taste of Home online turned out quite well.

I’m almost always responsible for bringing mashed potatoes to my husband’s family’s gathering as well. I usually make two kinds that have both been included in past recipe exchanges: Make Ahead Mashed Potatoes from the 2004 Exchange and Loaded Mashed Potatoes from the 2006 recipes. Usually, the Loaded ones are gone in a flash, especially if the kids are allowed to fill up their plates first!

My sister-in-law Amy also often brings the snacks that we munch on during the day before the big meal. The Fast Fiesta Dip she brings is usually gone quickly with 20 people hitting the bowl. This recipe calls for Fiesta Ranch Dip Mix (by a big name brand that isn’t paying me so I don’t have to list their name 😉 Having just looked at the package I see it’s also full of longwinded ingredients that include MSG. I think if I make this again, I’ll try it with this Fiesta Ranch dip mix copycat recipe: 1/2 c. dried parsley, 1/3 c. minced onion, 1/4 c. dried chives, 1/3 c. chili powder,  1/4 c. ground cumin,  1/4 c. salt.

And on the topic of dips, I really like the Healthy Ranch Dip on Tracie Hittman’s blog. Great with veggies or whatever you prefer, or thin it a bit with milk for a dressing. I have some in my fridge right now!
